I’m happy to announce that my Autumn Butternut Squash and Sweet Potato Casserole has been featured on Wayfair.co.uk.
I had a great time trying to create an Autumn recipe, especially as Butternut Squash is not an ingredient I tend to use. However, most of the other ingredients I used were store cupboard ingredients, making it easy to adapt and create at home.
Although the Butternut Squash Casserole recipe is vegetarian, you could also add pork or beef and slow cook for longer to make the casserole even more rich and tasty.
The recipe is adaptable and can be served with crusty bread, salad or eat as it is. The best part? You can freeze any leftovers and eat on another cold winter’s day.
