Inspired by Good Food
I made a spaghetti chorizo pesto dish for me & my boyfriend as i wanted something a bit different. We tend to eat a lot of spaghetti bolognese and never use spaghetti in any other dishes. It’s easy to get stuck into a trap with food especially when you come across recipes that are loved, i know my boyfriend is a sucker for sticking to things he knows he loves rather than trying anything new!
Changes i made
I added pesto to the spaghetti after it was cooked along with some chilli flakes.
Although the recipe mentioned cherry tomatoes i used vine tomatoes and cooked these in the oven with a few drops of balsamic vinegar to give them some extra flavour. I then served these beside the spaghetti rather than mixing it together.
I used store bought breadcrumbs as i currently don’t have a blender. The ones i bought were lemon and black pepper breadcrumbs.
It was a good version of the recipe however i think i may have gone a bit overboard on the breadcrumbs as the strong black pepper and lemon ruined the flavour of the spaghetti a tad. Next time i’d probably use normal breadcrumbs as the texture was a nice mix in the overall dish.
However, the tomatoes cooked differently than the recipe was a nice addition along with balsamic vinegar which complemented all the flavours. One to make again with a few adjustments!
